Nordic fish and Japanese sushi – The best of two worlds

At Rå Sushi we combine two unique traditions: premium seafood from the cold, clear waters of Norway with the perfected Japanese art of sushi. The Norwegian word "Rå" means both "raw" and "pure" – and that's exactly what you get from us: pure, unadulterated taste.

Direct route from sea to plate

All seafood comes fresh and directly to us, without middlemen. As always, we source these directly from our Norwegian smoke master and fishmonger Frederik Møller Andersen. From the North Sea to Niederdorf – it doesn't get more direct than that.

Whether raw, smoked or cooked, we make no compromises on fish quality. Our salmon comes from sustainable farming, is not treated with antibiotics and is processed gently using traditional methods after being caught.

Zurich has many sushi restaurants – but none like ours. Rå Sushi clearly stands out from the crowd:

  • First-class Nordic ingredients: The quality of our fish is unmatched in Zurich. Instead of distant imports, we rely on premium seafood from the North Sea.
  • Authentically Japanese preparation: With Jun Nakamura, we've gained an experienced sushi master who perfectly commands the Japanese tradition. The Japanese previously worked in the famous upscale department store Jelmoli, which was long an insider tip for great sushi in Zurich.
  • More fish, less rice: For us, fish is the focus. That's why at Rå Sushi you get generous portions of fish instead of excessive rice.
  • Straightforward concept: Take-away, delivery or spontaneous on-site enjoyment – with us you get first-class sushi without much fuss, exactly how you want it.

Our partners – A network of excellence

Lyksvad Caviar is a Danish family business and the only sturgeon farmer in Scandinavia and caviar producer in Denmark. Here, premium caviar from the sturgeon species Oscietra and Baerii is produced under controlled conditions – handmade, seasoned only with natural salt from the island of Læsø and without any additives. Co-owner Margrethe My Thorøe-Nielsen not only supplies top gastronomy in Denmark but also Frisk Fisk and is a longtime friend of our team.

Alex Sushi – Norway's sushi legend

For 22 years, Alex Sushi has been a hot spot for first-class Japanese cuisine in Oslo. Founded by Petter Sandberg, a business partner of Fredrik's Rökeri and friend of Matteo, the restaurant is now run by his daughter Thea. Jonathan Macaoba, sushi master at Alex Sushi for 10 years, shares his knowledge and techniques with our team in Zurich. This partnership connects us directly with Norway's best sushi tradition – a perfect circle of shared values and passion for the highest quality.
